We spent this past weekend celebrating John's birthday with lots of good food, wine, family, and friends. We started with an amazing dinner in Boston's North End at our favorite restaurant, Bacco. Laughed at a comedy show at the Improv Asylum, and enjoyed some good wine with some good friends. We even found some time this weekend to decorate our Christmas Tree. Needless to say, I didn't have a lot of time in the kitchen, but now I'm back!
I don't do a lot of baking because we aren't big sweets eaters, but this time of year always makes me want to fire up the oven. I love to bake, I just never know what to do with all of it! These Apple Cinnamon Streusel Mini Muffins are perfect for us, since they're super cinnamony and full of apples. I like to eat these as a dessert, breakfast, or a mid afternoon snack. They're very moist and much healthier than your typical muffin.
Preheat the oven to 350°F. Line a mini muffin pan with paper liners and lightly spray with oil. I just used vegetable oil spray. In a medium bowl, combine diced apples, lemon juice, ½ Tbsp honey, and ⅛ tsp cinnamon. Set aside.
In another medium bowl, combine flours, baking soda, pumpkin pie spice, ½ tsp cinnamon, and salt with a whisk. Set aside.
In a large bowl, mix ¼ cup honey, egg whites, coconut oil, applesauce, and vanilla extract.
Add the flour mixture to the wet mixture. Stir until just combined. Do not over mix! Fold in the apples.
In a small bowl combine the streusel ingredients. Mix until crumbly.
Pour batter into the prepared muffin cups. Top with streusel topping.
Bake for 12-14 minutes, or until an inserted toothpick comes out clean.
Cool for 10 minutes, then move to wire cooling rack. Cool completely before serving. Enjoy!

- 2 egg whites
- 2 Tbsp coconut oil, melted
- 1 cup unsweetened apple sauce
- 1 tsp vanilla extract
For the Streusel Topping
- 1 Tbsp whole wheat flour
- ¼ cup brown sugar, not packed
- 1 tsp cinnamon
- 1 Tbsp unsalted butter, cold
