Ingredients
- Bread: You'll need 2 slices of lightly toasted sourdough bread. You can use whatever bread you like but choose a good-quality artisan bread. I love using sourdough or whole grain for ricotta toast.
- Strawberries: Fresh strawberries are a must for this recipe. Remove the stems and thinly slice them. Read more about how to pick the best strawberries.
- Ricotta: I like to use part-skim ricotta cheese. You could use whole milk ricotta if you prefer. If your ricotta is extra watery, be sure to drain it out.
- Lemon Juice: A couple of teaspoons of fresh lemon juice to brighten the ricotta.
- Sea Salt: To round out the flavors.
- Lemon Zest: Fresh lemon zest, for an added pop of bright flavor.

How to Make Strawberry Toast with Ricotta
- In a bowl, stir together the ricotta, lemon juice, and a pinch of sea salt.
- Divide the ricotta mixture among the two pieces of toast and spread evenly. Top them with the strawberry slices and lemon zest. Serve and enjoy!
Expert Tip: If your ricotta is too watery, strain it through cheesecloth before using it for the best consistency.
Variations
- Swap out the ricotta. Not a fan of ricotta? Use cottage cheese or cream cheese.
- Add some nuts. Top with shelled pistachios or sliced almonds.
- Top with fresh herbs. Great options are basil or thyme.
- Want a sweeter toast? Drizzle with raw, unfiltered honey.
- Leave out the lemon. If you don't like lemon, leave it out. For added flavor, you can drizzle some almond butter or peanut butter. Or drizzle with some balsamic vinegar glaze and add fresh basil leaves.
- Whip the ricotta. For the best results, use whole milk ricotta. Mix it using a mixer or food processor until it's light and airy.
Serving Suggestions
If you're curious about when to serve strawberry ricotta toast, the real question is when you shouldn't serve it!
It's perfect for breakfast, brunch, an afternoon snack, or even dessert when you crave a sweet treat but want to be healthier.
Serve it on its own, or pair it with your favorite brunch foods. You could top it with your favorite fresh herbs like basil or thyme for a pop of color and flavor.
Make Ahead and Storage
Make Ahead: I don't recommend making this toast ahead of time. It only takes 5 minutes to make, so there's no need! It could become a little soggy if you make it too soon before serving.
To Store: If you have leftover toast, you could store it in the refrigerator in an airtight container for up to 24 hours.
Frequently Asked Questions (FAQ's)
The best bread for ricotta toast is fresh artisan bread, like sourdough, whole grain, or French bread. Lightly toast the slices before spreading the ricotta and toppings on them.
Though fresh strawberries are best for ricotta toast, you could also use frozen strawberries. Thaw them before using them and drain off any excess liquid.

Notes
When toasting your sourdough, be sure to lightly toast it so the crust doesn't become too hard to eat. Besides a toaster, you could also toast it in a skillet or in the oven. To toast in a skillet, lightly brush both sides with extra virgin olive oil, then toast in a heated pan over medium heat for 1-2 minutes per side. You could also place the oiled toast in the oven at 400°F for 5 minutes.
If your ricotta is too watery, strain it through cheesecloth before using it for the best consistency.
For a sweeter strawberry ricotta toast, you can add a drizzle of honey.
