    This simple Honey Ricotta Toast with Pistachios is a light and refreshing appetizer. It's perfect for a weekend brunch or to pair with a glass of wine before dinner.

    This ricotta toast is great for a brunch appetizer. It would be the hit of an easter or mother's day brunch. It also works as an easy breakfast served with a side of fruit, or as a dinner appetizer with a glass of white wine or rosé.

    Ingredients

    Bread: Sliced sourdough, but you can use whatever type of bread you prefer. I like to use a whole wheat sourdough from a local bread bakery. If you're in the Boston area, you have to try Iggy's Bread!

    Olive Oil: Extra virgin olive oil for brushing on the bread.

    Ricotta: Part skim ricotta - choose one that tastes fresh, is creamy, with a thick texture. If it's a little watery- you can strain it with a cheesecloth before spreading it on the toast.

    Honey: To drizzle over the ricotta to make it sweet.

    Pistachios: Roughly chopped roasted pistachios.

    Sea Salt: I like to use flaky sea salt to round out the flavors.

    Step-By-Step Instructions

    Honey Ricotta Toast with Pistachios is an easy appetizer that comes together quickly.

    1. Toast the bread. To toast the bread, preheat the oven to 400°F. Arrange the bread slices on a baking sheet. Lightly brush the tops with olive oil, then bake for 5-8 minutes until toasted.
    2. Spread on the ricotta. Let the bread cool for 2 minutes so you can easily handle it. Divide the ricotta among the 4 pieces of toast, and spread out evenly.
    3. Add toppings. Drizzle honey over each toast, and sprinkle with chopped pistachios.
    4. Serve. Serve topped with a pinch of flaky sea salt and enjoy!

    Ricotta Toast Variations

    I love to make this simple, but you can try some of these other variations.

    • Add fresh herbs - This toast would be great with fresh thyme, rosemary, sage, or mint.
    • Add some fruit - Fresh pear slices, figs, strawberries, blueberries, or blackberries would all pair really well with the ricotta and honey. Dried fruit like cranberries or apricots would also be great!
    • Make it savory - Add some prosciutto.

    Choose a ricotta that tastes fresh, is creamy, with a thick texture. If it's a little watery- you can strain it with a cheesecloth before spreading on the toast.

    You can toast the bread in a toaster, however I really like the texture of the toast by brushing with oil and toasting in the oven.
