These Apple and Brie Crostini are everything I love about fall. Warm cinnamon apples, melty brie, and a drizzle of honey on toasted baguette slices come together in just 20 minutes.

Fall is my favorite season, and I always end up with more apples than I planned at this time of year. These crostini are one of my favorite ways to use them. They’re simple, cozy, and perfect for apple season. 

These bites are a quick and easy holiday appetizer, great for entertaining, or an everyday snack. Instead of raw apple slices, they’re topped with warm, sautéed apples for extra cozy flavor. They’re SO good with serious apple pie vibes.

You can easily make them your own, too. Try pears instead of apples, swap the honey for maple syrup, or top them with thyme or pomegranate for a little color.

Ingredients

  • Baguette: A good quality French baguette, cut into 1/2-inch slices. You’ll only need half a baguette or a demi baguette.
  • Extra virgin olive oil: Just a little for brushing on the slices so they crisp in the oven.
  • Brie cheese: Use your favorite brie or swap it for goat cheese if you prefer.
  • Apple: A crisp apple is best because it won’t turn to mush after being cooked. I used a Honeycrisp apple, but Cosmic Crisp or Fuji apples also work.
  • Butter: Unsalted butter to sauté the apples. 
  • Cinnamon: Just a little cinnamon adds so much flavor to the apple topping.
  • Honey: Adds sweetness to the apples. Plus more for drizzling over the crostini. Maple syrup also works for a slightly different flavor.
  • Sea salt: Just a pinch of flaky sea salt is totally optional to round out the flavors.
  • Thyme: If you’d like to add a garnish, fresh thyme pairs great with the apples.

How to Make Apple and Brie Crostini

  1. Preheat the oven to 375°F. Arrange the baguette slices in a single layer on a baking sheet and lightly brush with olive oil. Bake for 4-5 minutes, just until lightly crisp.
  2. Place a slice of brie on each crostini. Return to the oven for 3-4 minutes, until the brie is melted.

  1. Meanwhile, melt the butter in a small skillet over medium heat. Add the diced apples, honey, and cinnamon. Cook for 4-6 minutes, stirring often, until softened.
  2. Spoon the warm apple mixture over the melted brie. Sprinkle with flaky sea salt and garnish with fresh thyme leaves if desired. For a sweeter crostini, drizzle with a little more honey. Serve warm and enjoy!

  • Slice the baguette evenly. Slice the baguette into ½-inch pieces. If they’re too thick, they’re a little hard to eat. If they’re too thin, they’ll toast and darken too quickly.
  • Don’t overtoast the baguette slices. They can go from light golden brown to burnt in just a few minutes so keep an eye on them!
  • Make the crostini ahead. Save time by toasting the baguette slices up to a day in advance or by using store-bought crostini.

Variations

I love these just the way they are, but they’re also really easy to customize if you want a different flavor or need to swap an ingredient. Here are a few variations that work well.

  • Use a different fruit. This recipe would be great made with a chopped Bartlett or Anjou pear or sliced figs!
  • Add more warm spices. An extra pinch of cinnamon or cardamom adds even more flavor. Or swap the cinnamon out for pumpkin pie spice.
  • Try it with maple syrup. Swap out the honey for pure maple syrup for a more fall flavor.
  • Give it more color. Top them with pomegranate seeds or dried cranberries, which would be perfect for the holidays.

These apple and brie crostini are best assembled right before serving, so the brie stays melty and the apples are warm.

If you want to prep a little ahead, you can get the components ready and store them separately:

  • Brie: Slice the brie and store it in an airtight container in the fridge.
  • Baguette: Lightly toast the slices and keep them at room temperature in a reusable bag or container.

Do I need to peel the apples?

No, you can leave the peels on if you prefer. I prefer to peel them because I like the texture and look better.

Do I need to remove the brie rind?

No, the rind is totally edible and softens as it melts. If you’re not a fan of the texture, you can trim it off, but the brie will melt a little faster and spread more if you do.

Should I serve the crostini warm or cold?

Warm is best, so the brie stays melty and the apples are soft. If you want a quicker, no-cook option, top the brie with thin raw apple slices and drizzle with honey instead.
