Ingredients
Pumpkin Spice Granola only requires a handful of simple ingredients that you can stock your pantry with to make all season long.
Oats: Old fashioned rolled oats are the main ingredient in this easy granola recipe. I like to bake them for a few minutes first to bring out the toasty flavor.

Coconut Oil: Melted coconut oil or any neutral oil will work in this recipe.
Pumpkin Pie Spice: The perfect blend of fall warm spices. Use your favorite store bought brand, or make your own! I like this recipe by Gimme Some Oven.
Vanilla Extract: Adds an extra layer of flavor.
Salt: Just a pinch of fine sea salt to round out the flavors.
Mix-Ins: You can use whatever your preference is for nuts, seeds or dried fruit. I like to use pepitas, sliced almonds and dried cranberries.

Step-By-Step Instructions
It's so easy to make homemade granola, and the best part is - you can easily customize it to your taste!
- Toast the oats. Preheat oven to 300°. Spread the rolled oats on a parchment lined baking sheet. Bake for 10 minutes, stirring halfway.
- Mix the dry ingredients. In a medium bowl, add the toasted oats, ground flaxseed, pepitas, sliced almonds, and dried cranberries. Toss to combine. Set aside.
- Mix the wet ingredients and spices. In another medium bowl, add the maple syrup, pumpkin puree, melted coconut oil, pumpkin pie spice, vanilla extract, and pinch of a salt. Stir to combine.
- Combine. Pour the wet ingredient mixture over the dry ingredient mixture. Stir together with a wooden spoon or silicone spatula.
- Bake. Spread the mixture out on the parchment lined baking sheet. Bake for 20-25 minute, or until golden. Granola will crisp up as it cools.
- Store. Cool completely on the baking sheet before storing. To store the Pumpkin Spice Granola, place in an airtight container at room temperature for up to two weeks.
