Description

Pumpkin Spice Granola is a healthy and easy recipe to make this fall. It's made with pumpkin, oats, flaxseed, maple syrup, and pumpkin pie spice. It's crunchy, delicious, and will make the house smell amazing!

Ingredients

Scale
  • 2 cups old fashioned rolled oats
  • 1/4 cup ground flaxseed
  • 1/4 cup pepitas
  • 1/4 cup sliced almonds
  • 1/4 cup dried cranberries
  • 1/4 cup pure maple syrup
  • 1/4 cup pumpkin puree
  • 1 tablespoon coconut oil, melted
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon pure vanilla extract
  • pinch of salt

Instructions

  1. Toast the oats. Preheat oven to 300°F. Spread the rolled oats on a parchment lined baking sheet. Bake for 10 minutes, stirring halfway.
  2. Mix the dry ingredients. In a medium bowl, add the toasted oats, ground flaxseed, pepitas, sliced almonds, and dried cranberries. Toss to combine. Set aside.
  3. Mix the wet ingredients and spices. In another medium bowl, add the maple syrup, pumpkin puree, melted coconut oil, pumpkin pie spice, vanilla extract, and pinch of a salt. Stir to combine.
  4. Combine. Pour the wet ingredient mixture over the dry ingredient mixture. Stir together with a wooden spoon or silicone spatula.
  5. Bake. Spread the mixture out on the parchment lined baking sheet. Bake for 20-25 minute, or until golden. Granola will crisp up as it cools.
  6. Store. Cool completely on the baking sheet before storing.
