- Cherry Tomatoes: Multi-colored or red cherry tomatoes are best in this salad. Their bright and sweet flavor pairs perfectly with the spinach and mozzarella. Half them for the perfect bite-sized pieces.
- Mozzarella: Small mozzarella balls (you'll see them labeled ciliegine), which are cherry sized. Half them, so they'll be about the same size as the halved cherry tomatoes. If you can't find these, just buy a fresh mozzarella ball and cut it into bite-sized pieces.
- Basil: Fresh basil is a must!
- Olive Oil: Good quality extra virgin olive oil. I like Delallo.
- Balsamic Glaze: For drizzling over the top of the salad for a delightful, tangy flavor.
