Description

Spinach Caprese Salad is a flavor-packed twist on the traditional caprese salad. Filled with spinach, basil, and cherry tomatoes, it's simple and delicious!


Ingredients

Scale
  • 2 cups baby spinach
  • 1 pint cherry tomatoes, halved
  • 4 ounces small mozzarella balls (ciliegine), halved
  • 1/4 cup basil leaves, sliced
  • 1 1/2 tablespoons extra virgin olive oil
  • 1-2 teaspoons balsamic glaze
  • salt and pepper, to taste

Instructions

  1. In a large bowl, toss together the spinach, cherry tomatoes, mozzarella, and basil. Drizzle with olive oil. Season with sea salt and pepper, to taste. Toss one more time.
  2. Place on a serving plate or in a bowl. Drizzle with balsamic glaze. Serve immediately and enjoy!


Notes

You can use multi-colored or red cherry tomatoes.

If you can't find small mozzarella balls, you can buy a large one and cut it into bite-sized pieces.
