Why You'll Love This Recipe
Once you make this homemade granola, you won't want to go back to store-bought again. It's a healthier option with whole grains and natural sweetener. It only takes 10 minutes to prep before baking, and is super easy to make.
This granola is vegan and gluten free (just be sure to use gluten free certified oats).
Ingredients
Almond Vanilla Granola is made with some basic ingredients, you likely already have in your pantry!
- Oats: Old fashioned oats are best for this granola. Don't use quick oats in this recipe, as they won't hold their shape.
- Almonds: A handful of sliced almonds.
- Cinnamon: Ground cinnamon adds a nice warm flavor to this granola.
- Salt: To round out the flavors.
- Maple Syrup: Pure maple syrup to naturally sweeten the granola. You could use honey instead, if you prefer. I love this real Vermont maple syrup from Elmore Mountain Mapleworks.
- Coconut Oil: Melted coconut oil or substitute with any other neutral flavored oil.
- Vanilla Extract: For the delicious vanilla flavor!

Step-By-Step Instructions
- Preheat the oven to 300°F. Line a large baking sheet with parchment paper.
- In a large bowl, stir together the oats, almonds, cinnamon, and salt until evenly combined.
- In a small bowl, stir the maple syrup, coconut oil, and vanilla extract until combined. Pour over the oat mixture and stir until completely coated.
- Spread the granola mixture evenly onto the prepared baking sheet. Bake for 15 minutes, rotate the pan, then bake for an additional 15 minutes or until golden brown.
- Cool completely before serving. Serve or store in an airtight container for up to 2 weeks.
Variations
The best thing about homemade granola is that it's super customizable! You can easily make it to your own preferred taste.
Change up some of the ingredients. Swap out the maple syrup for honey. Use different nuts or seeds, like pecans, pistachios, pepitas, or even shelled sunflower seeds.
Add in your favorite mix-ins. Once the granola has cooled completely, you can stir in your favorite dried fruit, like cranberries, raisins, or blueberries. Want to make this into more of a treat? Stir in chocolate chips or chopped dark chocolate once the mixture has cooled completely.
Serving Suggestions
My favorite way to enjoy this Almond Vanilla Granola is over some greek yogurt with fresh blueberries or strawberries. Here are some other great ways to serve granola:
- Put it in a bowl with the milk of your choice. Add some fresh fruit to make it into a delicious breakfast.
- Add it to fruit and yogurt parfait.
- Munch on it right out of the jar for a snack.
- Serve it on top of ice cream for some added crunch.
- Sprinkle it over baked apples with a drizzle of honey.

Frequently Asked Questions (FAQ's)
Store homemade granola in an airtight container at room temperature for up to 2 weeks.
To make homemade granola crunchy, be sure to bake it at a low temperature, like 300°F. This gives the oats, nuts, and seed a chance to dry out and cook evenly instead of burning.

I love this recipe. I'm not generally a granola fan and this granola is delicious. I've made both single and double batches (because the single batches disappear too quickly), and both turn out great. I leave out the almonds and its still amazingly flavorful. I look forward to breakfast when I have this granola prepared 🙂
