    Teriyaki Tofu Stir Fry with Green Beans is a light but satisfying meal that's made with baked tofu and homemade teriyaki sauce.

    Ingredients

    • Tofu: One package (14 ounces) extra-firm tofu. Softer tofu won't hold it's shape, so be sure to use extra-firm!
    • Olive Oil: Either olive oil or your preferred cooking oil to toss with the tofu. This helps it crisp up in the oven.
    • Cornstarch: To toss with the tofu to make it extra crispy.
    • Garlic Powder: For seasoning the tofu.
    • Green Beans: Fresh green beans are a must in this recipe, rinsed and trimmed!
    • Salt: Sea salt to season both the tofu and green beans.
    • Teriyaki Sauce: Low sodium broth, low sodium soy sauce, olive oil, honey, ground ginger, minced garlic, crushed red pepper, cornstarch.

    Step-By-Step Instructions

    1. Slice the block of tofu in half (or thirds) lengthwise to create slabs that are ¾ inch to 1 inch thick. Place side by side between a few paper towels or a clean kitchen towel. Place a cutting board on top and stack something slightly heavy like a couple books or a heavy pan on top. This will put enough pressure to drain out the excess moisture from the tofu. Let the tofu drain for 20 minutes.
    2. Preheat the oven to 400°F. Line a large baking sheet with parchment paper. Once the tofu is drained, cut into ¾ inch to 1 inch cubes. Transfer to a large bowl and gently toss with 1 tablespoon olive oil. Sprinkle with cornstarch, garlic powder and sea salt. Gently toss until coated.
    3. Spread the tofu in a single layer evenly onto the prepared baking sheet. Bake for 30 minutes, flipping halfway, until golden and crispy around the edges.
    4. Meanwhile, prepare the sauce. In a small bowl, whisk together the broth, soy sauce, olive oil, honey, ginger, and garlic. Whisk in the cornstarch until combined. Season with crushed red pepper, if desired. Set aside.
    5. In a large skillet, heat 1 tablespoon of olive oil over medium-low heat. Add the green beans and season with sea salt. Cook for about 5-10 minutes, stirring occasionally, until your desired level of tenderness. Add in the cooked tofu and sauce. Cook for 1-2 minutes, stirring, until sauce is thickened and evenly coating the tofu and green beans.
    6. Serve by itself or over rice or noodles.

    Variations

    I love this recipe as it is, however if you want to change it up, here are some recommendations.

    • Add more vegetables like sliced red bell pepper, sliced red onion, baby corn, spinach, or any other favorite vegetables.
    • Instead of baking the tofu, you can cook the tofu however you prefer. Learn how to cook tofu, whether you want to pan fry, deep fry, air fry, or bake it.
    • Use store-bought teriyaki sauce instead of homemade teriyaki sauce. I recommend looking for a teriyaki baste and glaze, which is thicker than regular teriyaki sauce.
    • Prefer meat? Use cooked, diced chicken or beef instead. Cooked shrimp would also be great in this recipe.

    Serving Suggestions

    This Teriyaki Tofu Stir Fry with Green Beans is great for lunch or dinner. Serve it by itself, or over rice, quinoa, or noodles.
