    Just a handful of fresh ingredients comes together in this delicious dish.

    • Chicken Sausage: A 12-ounce package of pre-cooked sweet Italian chicken sausage, sliced into rounds.
    • Olive Oil: Extra virgin olive oil, or your favorite cooking oil, to sauté the vegetables.
    • Garlic: 2 cloves of minced garlic, for added flavor.
    • Bell Pepper: A red bell pepper, cut into 1-inch squares. You can substitute for whatever bell pepper color you prefer.
    • Onion: Half a medium yellow onion, cut into 1-inch squares. You can substitute red, white, or sweet onions.
    • Zucchini: One medium zucchini, cut into half moons.
    • Cherry Tomatoes: Quartered cherry tomatoes, for a bright and sweet flavor.
    • Salt: Sea salt to draw out all the flavors in the vegetables.

    Step-By-Step Instructions

    1. Heat a large skillet over medium heat. Add the sausage and a splash of water. Cook 5-7 minutes, flipping halfway, until browned. Remove the sausage from the pan and set aside.
    2. Wipe out the skillet and heat olive oil over medium-low heat. Add garlic and cook until fragrant, about 30 seconds. Add onions and peppers and cook 4-5 minutes, stirring occasionally, until starting to soften.
    3. Stir in the zucchini and tomatoes. Season with sea salt. Cook 4-5 minutes, stirring occasionally, until zucchini is at your desired tenderness.
    4. Add the sausage back into the skillet with the vegetables and cook for 1 more minute, stirring until combined.
    5. Serve warm, by itself, or over rice or noodles.

    This Chicken Sausage and Veggie skillet is very customizable. Swap out the sausage, vegetables, or add more seasoning to your liking.

    • Add in or swap the vegetables for other ones, like yellow squash, broccoli, mushrooms and corn.
