This Cherry Tomato and Chicken Sausage pasta is ready in about 25 minutes, and is so easy - anybody can make it! This recipe is great all-year round, but especially in the summer months when tomato season is here. Serve it with a side salad or some fresh crusty bread for a go-to weeknight dinner.
Ingredients
- Pasta: You'll need 8 ounces of your favorite pasta shape. I absolutely LOVE the Delallo Spirali pasta, however you can use your favorite shape. Rotini, Ziti, or Penne would also be great!
- Chicken Sausage: Half-pound Mild Italian Chicken Sausage is perfect for this recipe. I like to use raw chicken sausage and squeeze it out of the casing, breaking up into smaller chunks as it cooks. You'll cook this in a skillet over medium heat until cooked through and slightly browned. You could also use pre-cooked sausage in this recipe. Just slice it up and brown it before adding it into the pasta.
- Cherry Tomatoes: This is the star of the show. You need one pint of fresh cherry tomatoes, quartered. You'll simmer them with olive oil and garlic to make the sauce for the pasta.
- Garlic: All you need here is 2 cloves of minced garlic to round out those Italian Pasta flavors.
- Seasonings: There's not a whole lot of seasonings that go into this pasta recipe. You just need some sea salt and a dash of crushed red pepper.
- Toppings: Top with fresh basil (preferably from the garden!) and grated parmesan cheese. For best results, grate your own cheese using a box grater.

- Bring a large pot of salted water to a boil.
- Heat 1 teaspoon olive oil in a large skillet over medium heat. Add the sausage to the skillet. Cook, breaking up the sausage until cooked through and slightly browned, about 5 minutes. Set aside.
- Using a damp paper towel, wipe down the skillet. Heat one tablespoon olive oil over low heat. Add garlic and cook about 1 minutes until fragrant and golden. Add cherry tomatoes and season with sea salt. Simmer for about 10 minutes until the pasta is ready.
- In the meantime, cook pasta according to package directions. Reserve ¼ cup of pasta water before draining.
- Add pasta and sausage into the skillet with the tomatoes. Slowly mix in the reserved ¼ cup of pasta water mixing well. Season with a dash of crushed red pepper.
- Serve topped with fresh basil and parmesan cheese.

- ¼ cup fresh basil, sliced

Notes
You can substitute fully cooked sausage for the raw sausage. Just slice and brown before adding to the pasta.
If the chicken sausage is browning too quickly, add a splash of water to deglaze the pan.
