- Ground Turkey: 93% lean ground turkey. You can substitute for ground chicken, beef, or sausage.
- Sweet Potato: One large or two medium sweet potatoes, peeled and diced into ½" chunks. You'll want about 1 pound. I usually opt for Jewel or Red Garnet varieties. Read more about selecting and storing sweet potatoes.
- Onion: Half of a small yellow onion, diced.
- Pepper: Red bell pepper, diced. You can use orange or yellow bell peppers.

- Seasoning: A mixture of cumin, chili powder, salt and pepper.

How to Make Sweet Potato Turkey Hash
- Heat the oil in a large, non-stick skillet over medium heat. Add the ground turkey, onions, and peppers. Cook, breaking up the meat until the turkey is cooked through, about 5 minutes.
- Add the garlic, sweet potatoes, chicken broth, cumin, and chili powder. Season with sea salt and pepper.
- Mix and cover. Lower the heat to low. Cook for 14-16 minutes, stirring occasionally, until the sweet potatoes are tender. If there is still liquid in the bottom, remove the lid and cook for a few more minutes to allow the liquid to evaporate.
- Serve warm and enjoy. Top with fresh parsley or cilantro, if desired.

Expert Tip: Once the ground turkey, onions, and peppers are cooked, you can drain the excess fat from the pan. However, it isn't necessary.
Variations
- Make it spicy. If you want to give it a kick, add a minced jalapeno, a few dashes of crushed red pepper, or a pinch of cayenne.
- Add some greens. Stir in a few handfuls of chopped fresh spinach or kale during the last few minutes of cooking.
- Stir in more veggies. If you want to add more veggies, try some halved or quartered Brussels sprouts, cherry tomatoes, or corn.
- Make it even heartier. Stir in a can of rinsed and drained black beans.

Frequently Asked Questions (FAQ's)
No, you do not have to peel sweet potatoes. This will save on prep time and may have added nutrients. Just be sure to give them a good scrub before using them.
Though sweet potatoes can typically be found in grocery stores year-round, they are in season during the late fall through winter. This is when they will be the freshest and have the most flavor.
