Ingredients
All you need is just a handful of ingredients to make yellow squash and zucchini in the air fryer.
- Zucchini: Small or medium fresh zucchini. Choose one that's bright green, firm, and free of cuts and wrinkles. Read more about selecting the best zucchini.
- Yellow Squash: Small or medium fresh yellow squash. Same as with the zucchini, you should choose a squash that is bright yellow, firm, and free of blemishes.
- Olive Oil: Extra virgin olive oil for flavor and texture.
- Garlic: A clove of minced garlic to give it some added deliciousness.
- Salt and Pepper: Sea salt and freshly cracked pepper to round out the flavors.

Variations
Depending on what you're serving this Air Fryer Zucchini and Squash with, you may want to add some extra flavor. Try one of these variations.
- Make it cheesy. Add some grated or shredded parmesan cheese for extra flavor.
- Give it some crunch. Stir in some panko bread crumbs before air frying to give them a little crisp.

- Place the squash and zucchini in the air fryer basket in a single layer. Air fry for 7-8 minutes, stirring halfway until crisp-tender or your desired level of tenderness.

Tips for Air Frying Vegetables
Air-frying veggies is one of my favorite ways to make them. Follow these simple tips to make sure they come out delicious every time.
- Cut whatever vegetable you're cooking into similar-sized pieces. This will help them cook evenly.
- Don't overcrowd the air fryer basket. Overcrowding can cause your veggies to become soggy. Depending on the size of your air fryer, you may need to cook them in batches. If you do this, toss them all in the basket at the end of cooking for 30-60 more seconds to ensure it's all still warm.
- Give the basket a shake once or twice throughout cooking, or stir the veggies for the best texture.
- Use a small drizzle of olive oil. You don't need a lot of oil, but it will prevent your veggies from drying out and help them crisp up.
Serving Suggestions
Serve it as a healthy side dish with your favorite mains, like grilled chicken, fish, steak, or tofu.
You can toss it into your favorite pasta or stir-fry dishes for a complete meal.
Make Ahead and Storage
Make Ahead: You can prep the zucchini and squash up to 24 hours in advance. Cut it up and pop it in the fridge in a container until you're ready to air fry.
To Store: To store leftovers, refrigerate in an airtight container for up to 3 days. Reheat for a couple of minutes in the air fryer or a warm oven.
To Freeze: I don't recommend freezing it because it will change the texture.
