Make this Air Fryer Zucchini and Squash with a few simple ingredients in just 15 minutes. It's the perfect way to use those fresh summer squash and zucchini.

  • 1 medium zucchini, about 1/2 pound, cut into (3/4-inch) chunks
  • 1 medium yellow squash, about 1/2 pound, cut into (3/4-inch) chunks
  • 2 teaspoons extra virgin olive oil
  • 1 clove garlic, minced
  • salt and pepper, to taste

  1. Preheat the air fryer to 380°F for 5 minutes.
  2. In a large bowl, toss the zucchini, squash, olive oil, and garlic until combined. Season with salt and pepper, as desired.
  3. Place the squash and zucchini in a single layer in the air fryer basket. Air fry for 7-8 minutes, stirring halfway until crisp-tender, or your desired level of tenderness.
  4. Serve and enjoy!

Don't overcrowd the air fryer basket. Overcrowding can cause the veggies to become soggy. Cook in batches, if needed, then toss them all in the basket at the end of cooking for 30-60 more seconds to ensure it's all still warm.

Different brands and types of air fryers may vary in cook time. Adjust the time and temperature, as needed.

To store, refrigerate leftovers in an airtight container for up to 3 days.
