Description
This Sweet Potato Turkey Hash is a savory one-pan breakfast ready in just 30 minutes. Enjoy it on its own or with your favorite type of eggs for a complete meal.

- 1 tablespoon extra virgin olive oil
- 1 pound 93% lean ground turkey
- 1/2 small yellow onion, diced
- 1 red bell pepper, diced
- 1 clove garlic, minced
- 1 large sweet potato, peeled and cut into (1/2-inch”) cubes*
- 1/3 cup low sodium chicken broth
- 1 1/2 teaspoons cumin
- 1 teaspoon chili powder
- sea salt and pepper, to taste
Instructions
- Heat the oil in a large non-stick skillet over medium heat. Add the ground turkey, onions, and peppers. Season with a pinch of sea salt. Cook breaking up the meat until the turkey is cooked through, about 5 minutes.
- Add the garlic, sweet potatoes, chicken broth, cumin, and chili powder. Season with sea salt and pepper.
- Mix and cover. Lower the heat to low. Cook for 14-16 minutes, stirring occasionally, until the sweet potatoes are tender. If there is still liquid in the bottom, remove the lid and cook for a few more minutes to allow the liquid to evaporate.
- Taste and season with more salt and pepper, if needed. Serve warm and enjoy. Top with fresh parsley or cilantro, if desired.
Notes
Use 1 large or 2 medium sweet potatoes. You’ll want about 1 pound.
Once the ground turkey is cooked, you can drain the excess fat from the pan if you prefer, however it is not necessary.
Enjoy it as is, or with your favorite type of eggs. Top it with shredded cheddar or colby jack cheese, hot sauce, avocado, and/or your favorite fresh herbs. Chopped parsley and cilantro are great options.
To store, refrigerate in an airtight container for up to 3 days.
