Just a few simple ingredients are tossed together on one pan for this dinner or meal prep meal!

  • Green Beans: Fresh green beans, trimmed.
  • Yellow Potatoes: Yukon gold, yellow, or baby creamer potatoes. Cut them into 1″ chunks.
  • Chicken Sausage: Pre-cooked mild Italian chicken sausage.
  • Olive Oil: For drizzling over the vegetables to roast in the oven.
  • Seasoning: Garlic powder, sea salt, and fresh cracked pepper.

Step-By-Step Instructions

  1. Preheat the oven to 425°F. Spray a large baking sheet with olive oil or cooking spray.
  2. In a small bowl, stir together the garlic powder and sea salt until combined. Set aside.
  3. Place the potatoes on the baking sheet and drizzle with 1 tablespoon of olive oil. Sprinkle half of the seasoning mixture over them, then toss until coated. Spread into a single layer. Bake for 12 minutes. Flip the potatoes using a spatula, then move them to one side of the baking sheet.
  4. Place the green beans on the other side of the baking sheet and drizzle with the remaining 1 tablespoon of olive oil. Sprinkle the remaining seasoning over them and toss to combine. Add the chicken sausage slices and toss everything to combine. Spread evenly on the baking sheet in a single layer. Do not overcrowd the pan. Bake for 20 minutes, or until the green beans are your desired tenderness and potatoes are beginning to brown on the edges.
