Green Beans with Potatoes and Sausage

    Why You'll Love This Recipe

You are going to love how simple this delicious sheet pan meal is to prepare. You'll love how easy the cleanup is even more! Since it uses just one pan and takes minimal prep time, it's perfect for a busy weeknight.

Simply toss the veggies and sausage on a sheet pan, then roast them for less than 45 minutes! Sausage, potatoes, and green beans are the perfect comfort food for just about any time of year.

I love to use chicken sausage since it's more lean than other types of sausage. If you're looking for more sausage recipes, try this popular Chicken Sausage Veggie Skillet or this Cherry Tomato and Chicken Sausage Pasta.

    Ingredients

Just a few simple ingredients are tossed together on one pan for this dinner or meal prep meal!

    • Green Beans: Fresh green beans, trimmed.
    • Yellow Potatoes: Yukon gold, yellow, or baby creamer potatoes. Cut them into 1" chunks.
    • Chicken Sausage: Pre-cooked mild Italian chicken sausage.
    • Olive Oil: For drizzling over the vegetables to roast in the oven.
    • Seasoning: Garlic powder, sea salt, and fresh cracked pepper.

    Step-By-Step Instructions

    1. Preheat the oven to 425°F. Spray a large baking sheet with olive oil or cooking spray.
    2. In a small bowl, stir together the garlic powder and sea salt until combined. Set aside.
    3. Place the potatoes on the baking sheet and drizzle with 1 tablespoon of olive oil. Sprinkle half of the seasoning mixture over them, then toss until coated. Spread into a single layer. Bake for 12 minutes. Flip the potatoes using a spatula, then move them to one side of the baking sheet.
    4. Place the green beans on the other side of the baking sheet and drizzle with the remaining 1 tablespoon of olive oil. Sprinkle the remaining seasoning over them and toss to combine. Add the chicken sausage slices and toss everything to combine. Spread evenly on the baking sheet in a single layer. Do not overcrowd the pan. Bake for 20 minutes, or until the green beans are your desired tenderness and potatoes are beginning to brown on the edges.
    5. Serve warm and enjoy!

Expert Tip: Cut the potatoes so they are all about the same size for even cooking.

    Variations

    • Use a different type of pre-cooked sausage. Try chicken apple sausage, pork sausage, spicy Italian sausage, smoked sausage or kielbasa.
    • Substitute the yellow potatoes for red potatoes. You can use baby red potatoes or regular red potatoes.

    Serving Suggestions

Once cooked, you can top it with fresh herbs before serving. Some favorites are parsley, thyme, rosemary, and basil.

It's great on it's own or you can serve it with a big side salad, rice, or orzo.

To store: refrigerate in an air tight container for up to 3 days.

    Frequently Asked Questions (FAQ's)

What do you serve with sausage, green beans, and potatoes?

Sausage, green beans, and potatoes are great served on their own! You could also serve it with a big side salad, your favorite type of rice, or a side of orzo with a drizzle of olive oil and lemon juice.

Can I use frozen green beans in place of fresh green beans?

To use frozen green beans in place of fresh green beans, simply leave out the green beans from the sheet pan. Cook them according to package directions, and toss them with the sausage and potatoes once they are fully baked.
