Description

Green Beans with Potatoes and Sausage is a sheet pan meal the whole family will love! Just a handful of ingredients are roasted on just one pan for an easy dinner.


Ingredients

  • 12 ounces fresh green beans, trimmed
  • 1 pound yellow potatoes (cut into 1" cubes)
  • 1 (12 ounce) package pre-cooked mild Italian chicken sausage, sliced into rounds
  • 2 tablespoons olive oil, divided
  • 1/2 teaspoon garlic powder
  • 1/8 teaspoon sea salt
  • fresh cracked pepper, to taste

Instructions

  1. Preheat the oven to 425°F. Spray a large baking sheet with olive oil or cooking spray.
  2. In a small bowl, stir together the garlic powder and sea salt until combined. Set aside.
  3. Place the potatoes on the baking sheet and drizzle with 1 tablespoon of olive oil. Sprinkle half of the seasoning mixture over them, then toss until coated. Spread into a single layer. Bake for 12 minutes. Flip the potatoes using a spatula, then move them to one side of the baking sheet.
  4. Place the green beans on the other side of the baking sheet and drizzle with the remaining 1 tablespoon of olive oil. Sprinkle the remaining seasoning over them and toss to combine. Add the chicken sausage slices and toss everything to combine. Spread evenly on the baking sheet in a single layer. Bake for 20 minutes, or until the green beans are your desired tenderness and potatoes are beginning to brown on the edges.
  5. Serve warm and enjoy!


Notes

Cut the potatoes all about the same size to be sure they cook evenly.
