We don't do pork chops too often in our house, but tonight was a pork chops kind of night. Pork chops are the perfect base for my mango salsa. After take-out pizza during the Patriots game last night and for lunch today, I was definitely in the mood for something homemade, fresh, and colorful. This sweet and spicy salsa goes great on pork chops, tortilla chips, and tacos. It's a great way to incorporate some fruit into your dinner plate.
First prepare the mango salsa. Chop up the mango, cucumber, jalapeno, red onion, and cilantro.
Mix in a small bowl seasoning with salt and pepper to taste. Set aside.
Mix the thyme, garlic powder, paprika, salt and pepper. Season the pork chops on both sides with this. Lightly coat the pork chops with flour, shaking a little to remove any excess.
In a large skillet, heat the olive oil over medium heat. Add the pork chops and cook on each side 3-4 minutes, until cooked through.
Set the pork chops on a plate and let them rest for 2-3 minutes. Serve the pork chops with the mango salsa on top. Enjoy!

Ingredients
For the mango salsa
- 1 mango, chopped
- ¾ cup cucumber, chopped
- 2 tbsp red onion, chopped
- ¼ tsp jalapeno, minced
- 1 tbsp cilantro, chopped
- sea salt and pepper to taste
For the pork chops
- 1 tsp olive oil
- 4 thin pork chops (about ¾ lb)
- ¼ tsp paprika
- ¼ tsp thyme
- ½ tsp garlic powder
- 2 tbsp wheat flour
- sea salt and pepper to taste
Instructions
- Chop the mango, cucumber, red onion, jalapeno, and cilantro.
- Add to a small bowl, season with sea salt and pepper, and mix well. Set aside.
- In another small bowl, combine the paprika, thyme, garlic powder, sea salt, and pepper.
- Season the pork chops on each side with the seasoning mixture.
- Add the wheat flour to a small plate. Lightly flour the pork chops on each side, shaking to remove excess.
- Heat olive oil in a large skillet over medium heat.
- Add pork chops and cook 3-4 minutes on each side. Until cooked through.
- Put on a plate and let rest 2-3 minutes.
- Spoon mango salsa on top and serve.
