Pesto Turkey Sandwich with lettuce and tomatoes on a serving board.

This Pesto Turkey Sandwich is a delicious and easy lunch. Pesto is spread over a baguette, then topped with turkey, cheese, tomatoes, and lettuce.

    Why You'll Love This Recipe

You are going to love this turkey sandwich for a lunch or easy dinner. It's simple, loaded with flavor and requires no cooking! It's great in summer using fresh garden tomatoes, especially on those hot days where you want a no cook summer dinner. Pack it in the cooler to bring to the beach, picnics, lunch at work, and so much more.

It's even great to enjoy all year round, especially right after Thanksgiving or Christmas if you have leftover turkey to use up!

    Ingredients

Just a handful of ingredients come together in this recipe.

    • Bread: A good quality bread sets this sandwich over the edge. I love to use a baguette, however sourdough, ciabatta or your favorite rolls all work well here.
    • Turkey: Oven roasted turkey breast. You can use deli meat or leftover turkey slices.
    • Mozzarella: Sliced mozzarella cheese. If you don't like mozzarella, try Swiss cheese or provolone.
    • Pesto: Basil pesto, store-bought or homemade. Try this Spinach Basil Pesto or Almond Basil Pesto.
    • Lettuce: Crispy leaf lettuce or arugula.
    • Tomato: A fresh vine ripened tomato, sliced.

    Step-By-Step Instructions

In just a few simple steps, you'll be enjoying this Pesto Turkey Sandwich!

    1. Slice the baguette lengthwise to create 2 slices. Spread the pesto on each slice of bread.
    2. Assemble the sandwich by layering turkey, mozzarella cheese, tomato slices, and lettuce on the bottom slice of bread. Top with the other slice of bread. Cut the sandwich in half to create 2 sandwiches.
    3. Serve with your favorite sandwich sides and enjoy!

Expert Tip: Though this sandwich is best enjoyed immediately, you can store it for several hours in the the refrigerator. Store in a container, plastic bag, or wrap in Bee's Wrap.

    Variations

    • Make it with a different bread. Ciabatta, sourdough or your favorite rolls would all work great for this sandwich. You can even make it healthier with whole wheat or multi grain bread. For gluten-free, just be sure to use gluten-free bread.
    • Add more toppings. Sun dried tomatoes or roasted red peppers would add some extra flavor.
    • Swap out the turkey for chicken. If you don't have turkey, you could use sliced chicken from the deli or even carved rotisserie chicken slices.
    • Use leftover Thanksgiving turkey! If you're not sure what to do with leftover thanksgiving turkey, this is a delicious sandwich to make with it.
    • Toast the bread or make it into a panini. Toasting the bread will give it some great texture or make it into a panini for a warm sandwich with melty cheese.

    Serving Suggestions

I love making Pesto Turkey Sandwiches for lunch or an easy dinner. You can make a few sides to go with it for a complete meal. Try my Rainbow Orzo Salad or Air Fryer Seasoned Steak Fries.

Make a platter of them to serve at your next game day get together. Sandwiches are always great football food paired with a bag of chips or fruit salad.

    Frequently Asked Questions (FAQ's)

Can I make a turkey sandwich ahead of time?

Yes! You can make a turkey sandwich ahead of time. If you are using tomato or any other "wet" ingredient, be sure it doesn't directly touch the bread to prevent it from getting soggy. Consider putting a layer of lettuce between the tomato and bread.

    What is pesto?

Pesto is an Italian style sauce, typically made of basil, pine nuts, grated aged cheese, and garlic. These ingredients are ground then blended with olive oil.
