Why You'll Love This Recipe
This hummus veggie sandwich is a must-try lunch! I've been dreaming about this one ever since I made it. It's bright, delicious, and so fresh!
It's no secret that fresh veggies are a healthy food option, but many veggie sandwiches are plain and boring. This one is far from that!
The textures are amazing. It's made with toasted whole-grain bread, crispy cucumber slices, carrot ribbons, spinach, juicy tomatoes, avocado, and creamy hummus. The flavors are even better! Classic hummus pairs with a dash of everything bagel seasoning.
It's quick and easy to make, vegan, and can be made gluten-free using your favorite gluten-free bread.

Ingredients
This sandwich is absolutely delicious at the peak of the summer when tomatoes and cucumbers are in season. But it's also great any time since it has easy-to-find, plant-based ingredients no matter what time of the year.
- Hummus: Use your favorite classic hummus. I like Cedar's Organic Hummus. You can swap it out for your favorite flavored hummus, like roasted red pepper or garlic.
- Everything Bagel Seasoning: A sprinkle of everything bagel seasoning for added flavor. Leave this out if you choose a flavored hummus.
- Whole Grain Bread: A couple of slices of whole grain bread. You can substitute for a pita, wrap, or your preferred sandwich bread.
- Spinach: A handful of fresh baby spinach. You can substitute for crispy lettuce, mixed greens, romaine, or arugula.
- Carrots: A large carrot sliced into ribbons.
- Cucumber: Half a small English cucumber cut into thin slices.
- Tomato: Fresh tomato slices.
- Avocado: Half a ripe, small avocado, peeled, pitted, and sliced.

How to Make a Cucumber Hummus Sandwich
- Pat the veggies dry with a paper towel. Spread 1 tablespoon of hummus on top of each slice of toasted bread. Sprinkle the everything bagel seasoning over the hummus.
- Assemble the sandwich by layering baby spinach, carrot ribbons, cucumber, tomato, and avocado.
- Serve with your favorite sides, and enjoy!
Expert Tip: Since this is a packed sandwich, be sure to toast the bread. The toast will help it hold up to all those fillings!
Variations
- Swap out the hummus. Try a flavored hummus like garlic, roasted red pepper, or lemon. Not a fan of hummus? Use tzatziki, spicy mayo, pesto, or romesco. Be sure to leave out the everything bagel seasoning if you opt for a flavored spread.
- Add some fresh herbs. For a pop of flavor, add fresh cilantro or basil.
- Use a different bread. Instead of whole grain bread, you could use sourdough, french bread, tortilla, pita, ciabatta, or whatever kind of bread you love!
- Swap out the veggies. Replace or add in different veggies. Try it with sprouts, micro greens, romaine, radishes, sliced red onions, or red bell pepper.
- Add your favorite sandwich toppings. Do you have more favorite sandwich toppings? Add them in! I love to add pickled veggies, roasted veggies, crispy bacon, or plant-based bacon.
- Top it with cheese. Add your favorite cheese or dairy-free cheese substitute. Sliced cheddar or crumbled feta are both great options.
Serving Suggestions
This veggie sandwich with hummus is the perfect lunch! It's healthy, fresh, and bright. It's even perfect for a light dinner or to serve at a brunch spread.
Serve it with your favorite sandwich sides, like a dill pickle, potato chips, a cup of soup, fruit salad, baked beans, sweet potato fries, or pasta salad.
Make Ahead and Storage
Make Ahead: This sandwich is best made fresh, so I don't recommend making it ahead of time. The veggies will wilt, and the avocado will brown.
To Store: If you need to store this sandwich (especially if you're making it in the morning for lunch), store it in an airtight container or Bee's Wrap Sandwich Wrap in the refrigerator for up to 24 hours.
Frequently Asked Questions (FAQ's)
Toast the bread first to prevent your veggie hummus sandwich from getting soggy. Place any juicy veggies, like tomatoes, in the middle of the sandwich so they aren't touching the bread.
For a veggie sandwich, opt for a bread that contains whole grains and is full of flavor. I like to use a good quality whole-grain bread.
