Description

This Cucumber Hummus Sandwich is veggie-packed, flavorful, and incredibly satisfying! It’s the perfect easy lunch for any veggie lover.


Ingredients

Scale
  • 2 slices whole grain bread, toasted
  • 2 tablespoons classic hummus
  • 1/2 teaspoon everything bagel seasoning
  • 1/4 cup fresh baby spinach
  • 1/2 large carrot, sliced into ribbons
  • 1/2 small english cucumber, thinly sliced
  • 4 slices fresh tomato
  • 1/2 small avocado, peeled, pitted, and sliced


Instructions

  1. Pat the veggies dry with a paper towel. Spread 1 tablespoon of hummus on top of each slice of toasted bread. Sprinkle the everything bagel seasoning over the hummus.
  2. Assemble the sandwich by layering baby spinach, carrot ribbons, cucumber slices, tomato slices, and avocado.
  3. Serve with your favorite sides, and enjoy!


Notes

Since this is a packed sandwich, be sure to toast the bread. The toast will help it hold up to all those fillings!

If you need to store this sandwich (especially if you’re making it in the morning for lunch), store it in an airtight container or Bee’s Wrap Sandwich Wrap in the refrigerator for up to 24 hours.
