This recipe skips the marinating step but still has all those delicious flavors, thanks to a drizzle of cilantro lime vinaigrette.

    Ingredients

    • Steak: ¼ pound sirloin steak, grilled to your desired wellness and cut into bite size pieces. You could also use skirt steak or flank steak.
    • Tortillas: Large flour tortillas. You could use white flour or whole wheat.
    • Mexican Cheese: Shredded Mexican blend cheese. You can substitute for cheddar or monterey jack cheese.
    • Tomatoes: Cherry tomatoes, quartered. Roma tomatoes would also work.
    • Cilantro Lime Vinaigrette: A drizzle of homemade Cilantro Lime Vinaigrette. You could use store-bought if you prefer. Or you can simply toss in some fresh chopped cilantro and a squeeze of lime if you need to save time.
    • Jalapeño: A jalapeño, sliced. (optional)

    Step-By-Step Instructions

    These Carne Asada Quesadillas come together in just 5 minutes using already grilled steak.

    1. Heat a nonstick skillet over medium-heat. Lightly spray with olive oil. 
    2. Place 1 tortilla in the pan. Spread out half of the mexican cheese evenly on the tortilla. On one half of the tortilla, evenly spread out the steak, tomatoes, and jalapeño slices (if using). Drizzle 1 teaspoon of cilantro lime vinaigrette over the steak side. Fold the tortilla in half, and cook until golden on the bottom about 1 more minute. Flip once and cook for another 1-2 minutes until both sides are golden. Repeat with the remaining tortilla.
    3. Cut each quesadilla into wedges, serve with your favorite toppings, and enjoy!

    Expert Tip to Grill Steak: Generously season the steak on both sides with salt and pepper. Let sit at room temperature for 15 minutes. Heat a grill or grill pan over medium-high heat. Grill steak for 3-4 minutes on each side until desired doneness. Remove from heat and let rest for at least 5 minutes before slicing.

    These quesadillas are best served immediately, however they can be stored in the refrigerator in an air tight container for up to 3 days or frozen for up to 2 months.
