Description

You are going to love these quick and easy Carne Asada Quesadillas. They're super simple and bursting with flavor. This is my favorite recipe for using leftover steak!


Ingredients

  • 2 large flour tortillas
  • 1 cup shredded Mexican cheese
  • 1/4 pound sirloin steak, grilled and cut into bite-sized pieces
  • 1/4 cup cherry tomatoes, quartered
  • 2 teaspoons cilantro lime vinaigrette
  • 1 jalapeño, sliced (optional)

Instructions

  1. Heat a nonstick skillet over medium-heat. Lightly spray with olive oil. 
  2. Place 1 tortilla in the pan. Spread out half of the mexican cheese evenly on the tortilla. On one half of the tortilla, evenly spread out the steak, tomatoes, and jalapeño slices (if using). Drizzle 1 teaspoon of cilantro lime vinaigrette over the steak side. Fold the tortilla in half, and cook until golden on the bottom about 1 more minute. Flip once and cook for another 1-2 minutes until both sides are golden. Repeat with the remaining tortilla.
  3. Cut each quesadilla into wedges, serve with your favorite toppings, and enjoy!


Notes

Expert Tip to Grill Steak:  Generously season the steak on both sides with salt and pepper. Let sit at room temperature for 15 minutes. Heat a grill or grill pan over medium-hight heat. Grill steak for 3-4 minutes on each side until desired doneness. Remove from heat and let rest for at least 5 minutes before slicing.

You can substitute the homemade cilantro lime vinaigrette for a store-bought cilantro lime dressing, or simply using some chopped cilantro and a squeeze of lime juice.

These quesadillas are best served immediately, however they can be stored in the refrigerator in an air tight container for up to 3 days or frozen for up to 2 months.

If you need to make them ahead of time, do not drizzle the cilantro lime vinaigrette inside. Serve it separately for dipping to prevent them from getting soggy.
