Ingredients

- Chicken: Homemade cooked chicken breast or a store-bought rotisserie chicken, shredded. Read more about how to make shredded chicken.
- Bacon: Cooked and chopped. I like using Applegate pre-cooked bacon to keep this quick and easy.
- Tomatoes: Cherry or grape tomatoes, quartered.
- Cucumber: Diced cucumber for some fresh crunch.
- Greek Yogurt: Use plain Greek yogurt instead of mayo for a lighter, creamy base. I like FAGE.
- Lemon Juice: A little lemon juice brightens everything up.
- Garlic Powder: Adds a simple savory flavor to the dressing.
- Salt and Pepper: To bring everything together.
- Chives: Finely chopped for a little more savory flavor. You can also use green onions or finely diced red onion.

How to Make BLT Chicken Salad
- In a large bowl, whisk together the Greek yogurt, lemon juice, and garlic powder. Season with salt and pepper, to taste.
- Add the shredded chicken, bacon, tomatoes, cucumber, and chives. Gently stir until everything is evenly coated. Taste and adjust seasoning as needed.


- Serve over fresh lettuce for lettuce wraps, or spoon onto your favorite bread for a sandwich.

- Use rotisserie chicken to save time. I grab a rotisserie chicken from the grocery store as a quick shortcut.
- Chop everything into small, similar-sized pieces. That way, you get a little bit of everything in each bite.
- Chill before serving. Letting it sit in the fridge for 20 to 30 minutes helps all the flavors come together.
Variations
- Use turkey instead. This recipe is perfect for leftover roasted turkey!
- Swap the bacon. Turkey bacon is a great lighter option.
- Try it with mayo. Use half Greek yogurt and half mayonnaise for a richer option.
- Add a little extra flavor. Try stirring in a little Dijon mustard or a pinch of smoked paprika.
- Mix in more veggies. Finely chopped red onion, diced red bell pepper, or celery adds even more crunch.
Serving Suggestions
Serve this in lettuce wraps or on toasted bread with crisp lettuce on top.

To Store: Place in an airtight container and refrigerate it for up to 3 days. Just stir the leftovers before serving.
