Description

This BLT Chicken Salad is a lighter take on the classic, made with Greek yogurt, crispy bacon, and fresh veggies. Perfect for easy lunches or meal prep.


Ingredients

Scale
  • ½ cup 0% fat plain Greek yogurt
  • 1-2 tsp lemon juice
  • ¼ teaspoon garlic powder
  • Sea salt and pepper, to taste
  • 2 cups shredded cooked chicken
  • 4 slices cooked bacon, chopped
  • ½ cup quartered cherry or grape tomatoes
  • ½ cup diced cucumber
  • 1 tablespoon finely chopped chives
  • Lettuce and/or bread, for serving


Instructions

  1. In a large bowl, whisk together the Greek yogurt, lemon juice, and garlic powder. Season with salt and pepper, to taste.
  2. Add the shredded chicken, bacon, tomatoes, cucumber, and chives. Gently stir until everything is evenly coated. Taste and adjust seasoning as needed.
  3. Serve over fresh lettuce for lettuce wraps, or spoon onto your favorite bread for a sandwich.


Notes

Letting it sit in the fridge for 20 to 30 minutes helps all the flavors come together.
