Ingredients
- Ground Turkey: Choose ground turkey that is 93% lean. The fat content will help the burgers stay moist. I would not recommend leaner ground turkey for these burgers. You can substitute for beef for a more traditional burger.
- Zucchini: Fresh shredded zucchini. I like to use my box grater on the larger holes to grate the zucchini. Read more about how to shred zucchini.
- Carrot: Fresh shredded carrot. You'll shred this in the same way you shredded the zucchini.
- Onion: Finely diced yellow onion. You can substitute it for red onion if you prefer!
- Bell Pepper: Finely diced red bell pepper. Substitute whatever color bell pepper you prefer. To add some spice, you could also add a minced jalapeño.
- Breadcrumbs: Plain panko breadcrumbs will help the turkey stay together and retain moisture. You can substitute for regular breadcrumbs if that's what you have. To make these gluten-free, be sure to use gluten-free breadcrumbs.
- Burger Seasoning: Homemade Burger Seasoning or your favorite store-bought seasoning. I like to use a simple blend of paprika, garlic powder, onion powder, sea salt, and pepper.

- Using a paper towel, squeeze the excess moisture from the shredded carrots and zucchini. Place them in a large bowl.
- Add the ground turkey, panko breadcrumbs, onion, red bell pepper, and burger seasoning. Mix until just combined. Divide the mixture and form it into four equal patties.
- Preheat a grill or grill pan over medium-high heat and lightly spray with oil to prevent sticking.
- Cook the burgers for 4-5 minutes per side or until they're cooked through and reach an internal temperature of 165°F.
- Serve on buns with your favorite toppings or over a bed of lettuce.
Tips for How to Make Juicy Turkey Burgers
Nobody likes a dry burger, so if you want to make the best turkey burgers, follow these tips to make sure they are moist and juicy.
- Do not over-mix. Mixing the turkey and veggie mixture until just combined is important. If you overwork the meat, it can become tough.
- Don't press on the patties as they cook. Pressing on the burgers with your spatula while they are cooking will cause the juices to come out and make your burgers dry. Only use your spatula to flip them, and only flip them once!
- Use a meat thermometer. An instant read thermometer will help you check if they're done. Turkey burgers should reach an internal temperature of 165°F, according to the USDA.
What to Serve with Turkey Burgers
These Turkey Burgers with Veggies are the perfect cookout or weeknight meal since they're quick and easy. Serve them with your favorite pasta salad, like this orzo salad. They're also great served with corn salad with avocado, air fryer seasoned steak fries, or a grilled vegetable platter.

To Freeze: I recommend freezing them before cooking them. You can stack them with a layer of parchment paper between each burger and store them in an airtight container or freezer bag. Defrost in the refrigerator overnight or add a couple of extra minutes per side when grilling from frozen.
