This Peach Arugula Burrata Salad with Blackberries is the best summer salad. It has juicy peaches, creamy burrata, and a honey balsamic vinaigrette. This salad is quick and easy! It makes a great side to just about any meal - especially during these summer grilling days.

Salad Ingredients
- 6 cups baby arugula
- 2 yellow peaches, sliced
- 6 ounces blackberries
- 2 balls burrata, halved
- black pepper or crushed red pepper to taste (optional)
Honey Balsamic Vinaigrette
- 2 tablespoons extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon honey
- 1 teaspoon dijon mustard
- 1/8 teaspoon garlic powder
- salt and pepper to taste
Instructions
- Make the dressing by combining all the honey balsamic vinaigrette ingredients in a small bowl or jar. Set aside.
- Divide the arugula among four plates.
- Top each with some peaches, berries, and half a burrata ball.
- Drizzle each with honey balsamic vinaigrette.
- Season with black pepper or crushed red pepper to taste. (optional)
- Serve and enjoy!
