    Peach Arugula Burrata Salad with Blackberries

    This Peach Arugula Burrata Salad with Blackberries is the best summer salad. It has juicy peaches, creamy burrata, and a honey balsamic vinaigrette. This salad is quick and easy! It makes a great side to just about any meal - especially during these summer grilling days.

    Ingredients You'll Need

    Peaches: Two ripe and juicy yellow peaches are the main ingredient for this salad. Slice them up to add to the salad.

    Arugula: Six cups of Baby Arugula. It has that fresh peppery flavor profile, which goes well with the sweet peaches and berries. If arugula isn't your thing, then use some mixed greens instead.

    Burrata: You need two balls of this fresh and creamy cheese. If you haven't had burrata before, it's similar to mozzarella, but much more creamy in the middle.

    Blackberries: Just a half pint of Blackberries to add the perfect amount of sweetness and some crunch to the salad.

    Honey Balsamic Dressing: Olive Oil, Balsamic Vinegar, Honey, Dijon Mustard, Garlic Powder, Salt and Pepper to taste.

    This salad couldn't be easier! To assemble the Peach Arugula Burrata Salad divide the baby arugula among four small plates. Top with peach slices, blackberries, and ½ of a burrata ball each. Drizzle with the honey balsamic dressing, and serve topped with some fresh ground pepper and/or crushed red pepper.

    • To make this into a meal, add a protein like Grilled Chicken, Grilled Steak or Prosciutto.
    • Not a fan of blackberries? Swap out the blackberries for raspberries, blueberries or strawberries.
    • Looking for more? Add something crunchy by topping the Peach Burrata Salad with chopped pistachios.
    • Prefer a different type of cheese? You can substitute the burrata for some feta or goat cheese.

    Ingredients

    Salad Ingredients

    • 6 cups baby arugula
    • 2 yellow peaches, sliced
    • 6 ounces blackberries
    • 2 balls burrata, halved
    • black pepper or crushed red pepper to taste (optional)

    Honey Balsamic Vinaigrette

    • 2 tablespoons olive oil
    • 2 tablespoons balsamic vinegar
    • 1 teaspoon honey
    • 1 teaspoon dijon mustard
    • ⅛ teaspoon garlic powder
    • salt and pepper to taste

    Instructions

    1. Make the dressing by combining all the honey balsamic vinaigrette ingredients in a small bowl or jar. Set aside.
    2. Divide the arugula among four plates.
    3. Top each with some peaches, berries, and half a burrata ball.
    4. Drizzle each with honey balsamic vinaigrette.
    5. Season with black pepper or crushed red pepper to taste. (optional)
    6. Serve and enjoy!
