Ingredients
Scale
- 1 cup milk
- 1/4 cup honey
- 4 tablespoons unsalted butter, divided
- 2 1/4 cup whole wheat flour
- 1 1/4 cup all-purpose flour
- 2 1/4 teaspoons instant yeast
- 1 teaspoon fine sea salt
- 1 large egg
Instructions
- Warm the liquid. Add the milk, honey, and 3 tablespoons butter to a small saucepan. Heat over low heat, stirring occasionally, until butter is melted and mixture reaches 110°F. Set aside.
- Mix the dry ingredients. In a large mixing bowl, whisk together the whole wheat flour, all-purpose flour, fine sea salt, and instant yeast.
- Form the dough and knead. Add the egg and warm liquid mixture to the dry ingredient mix. Using a silicone spatula, stir until a dough begins to form. Turn the dough out onto a lightly floured surface and knead for 6-8 minutes, adding more flour if dough is too sticky. (Add just 1-2 tablespoons at a time as needed. Do not add too much flour). Knead until dough is slightly tacky but smooth. Form the dough into a ball.
- Let the dough rise. Place the ball of dough into a large greased bowl and cover with a clean towel or plastic wrap. Let the dough rise in a warm place for 1 hour or until it's doubled in size.
- Shape the rolls. Gently deflate the dough and divide into 15 equal pieces. Shape each piece into a ball and place in a greased 9 x 13-inch baking dish. You should be able to fit 3 in a row, making 5 rows.
- Second rise. Cover the baking dish with a clean towel or plastic wrap. Put it in a warm place and let rise for about 45 minutes. When it's almost done rising, preheat the oven to 375°F. Melt 1 tablespoon of butter.
- Bake. Brush the tops of the buns with half of the melted butter. Bake for 15-20 minutes, or until golden and cooked through.
- Serve. Brush the tops with the other half of the melted butter while they are still warm. Serve warm and enjoy!
Notes
You want the liquid mixture to reach 110°F to activate the yeast. If you don't have a kitchen thermometer, you can check the mixture to make sure it's warm to the touch, but not hot.
