Ingredients – sweet Italian chicken sausage – extra virgin olive oil – 1 red bell pepper – ½ medium yellow onion – 1 medium zucchini – cherry tomatoes, – 2 cloves garlic – sea salt, to taste

Step 1 Heat a large skillet over medium heat. Add the sausage and a splash of water. Cook 5-7 minutes, flipping halfway, until browned. Remove the sausage from the pan and set aside.

Step 2 Wipe out the skillet and heat olive oil over medium-low heat. Add garlic and cook until fragrant, about 30 seconds.

Step 3 Add onions and peppers and cook 4-5 minutes, stirring occasionally, until starting to soften.

Step 4 Stir in the zucchini and tomatoes. Season with sea salt. Cook 4-5 minutes, stirring occasionally, until zucchini is at your desired tenderness.
