On one half of the tortilla, evenly spread out the steak, tomatoes, and jalapeño slices (if using). Drizzle 1 teaspoon of cilantro lime vinaigrette over the steak side.
Fold the tortilla in half, and cook until golden on the bottom about 1 more minute. Flip once and cook for another 1-2 minutes until both sides are golden. Repeat with the remaining tortilla.
