This Tomato Avocado Toast with Arugula is definitely breakfast goals! It's super fresh and simple to make in just 5 minutes. A delicious quick and easy breakfast.

- 2 slices whole grain bread
- 1 ripe small avocado, peeled and pitted
- 1 cup baby arugula
- 8 cherry tomatoes, quartered
- extra virgin olive oil, for drizzling
- 2 lemon wedges, for squeezing
- pinch of flaky sea salt
Instructions
- Toast the bread until golden.
- Add the avocado to a small bowl. Mash with a fork until desired consistency.
- Spread the mashed avocado evenly on the toasts. Divide the arugula over the toasts and top with cherry tomatoes. Lightly drizzle with extra virgin olive oil, a squeeze of lemon juice and pinch of flaky sea salt.
- Serve immediately and enjoy!
