Description

This Tomato Avocado Toast with Arugula is definitely breakfast goals! It's super fresh and simple to make in just 5 minutes. A delicious quick and easy breakfast.


Ingredients

  • 2 slices whole grain bread
  • 1 ripe small avocado, peeled and pitted
  • 1 cup baby arugula
  • 8 cherry tomatoes, quartered
  • extra virgin olive oil, for drizzling
  • 2 lemon wedges, for squeezing
  • pinch of flaky sea salt

Instructions

  1. Toast the bread until golden.
  2. Add the avocado to a small bowl. Mash with a fork until desired consistency.
  3. Spread the mashed avocado evenly on the toasts. Divide the arugula over the toasts and top with cherry tomatoes. Lightly drizzle with extra virgin olive oil, a squeeze of lemon juice and pinch of flaky sea salt.
  4. Serve immediately and enjoy!
