Description

These Spinach Feta Chicken Burgers are packed with lean meat and fresh ingredients. They come together in just 20 minutes, making them the perfect quick and easy meal for any night of the week.


Ingredients

  • 1 pound ground chicken
  • 1/2 cup fresh baby spinach, chopped
  • 1/4 cup crumbled feta cheese
  • 1 large egg
  • 1/4 cup panko breadcrumbs
  • 2 tablespoons red onion, finely diced
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon fine sea salt
  • 1/8 teaspoon black pepper
  • Optional for serving:  hamburger buns, mayonnaise, lettuce, and tomato

Instructions

  1. In a large mixing bowl, stir together the ground chicken, baby spinach, feta cheese, egg, panko breadcrumbs, red onion, garlic powder, sea salt, and black pepper until combined. Do not overmix.
  2. Form the chicken mixture into 4 patties. Preheat a grill or grill pan over medium-high heat and lightly spray with oil to prevent sticking.
  3. Cook the burgers for 3-5 minutes on each side, or until cooked through and they reach an internal temperature of 165°F.
  4. Serve on a bun with your favorite toppings, or over a bed of greens. Enjoy!


Notes

Be gentle when mixing. Over mixing the chicken can make it tough, so mix the ingredients until just combined. Use your hands or a gentle touch with a spatula to avoid compacting the meat.

Resist the urge to press down on the burgers while cooking. This can cause the juices to escape and the burgers to dry out. Let them cook undisturbed until ready to flip.
