Description

This nut-free Spinach Basil Pesto is so bright and flavorful, it goes with just about anything! Serve over some grilled meat, fish, veggies, pasta, or even as a condiment for your sandwiches. It only takes about 5 minutes to make, and is perfect for summer with all that fresh spinach and basil.


Ingredients

Scale
  • 2 cups fresh spinach, loosely packed
  • 1 cup fresh basil, loosely packed
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons parmesan cheese, grated
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • sea salt and pepper to taste

Instructions

  1. Using a blender or small food processor, blend all ingredients until smooth. Taste, and add salt and pepper as needed.
  2. Serve or store in an airtight container in the refrigerator for up to 1 week.


Notes

Leave out the parmesan for dairy free or vegan diets.

You can freeze for up to 6 months, though it does lose flavor the longer it's in the freezer.
