Description
This nut-free Spinach Basil Pesto is so bright and flavorful, it goes with just about anything! Serve over some grilled meat, fish, veggies, pasta, or even as a condiment for your sandwiches. It only takes about 5 minutes to make, and is perfect for summer with all that fresh spinach and basil.
Ingredients

- 2 cups fresh spinach, loosely packed
- 1 cup fresh basil, loosely packed
- 1/4 cup extra virgin olive oil
- 2 tablespoons parmesan cheese, grated
- 2 tablespoons fresh lemon juice
- 2 cloves garlic, minced
- sea salt and pepper to taste
Instructions
- Using a blender or small food processor, blend all ingredients until smooth. Taste, and add salt and pepper as needed.
- Serve or store in an airtight container in the refrigerator for up to 1 week.
Notes
Leave out the parmesan for dairy free or vegan diets.
You can freeze for up to 6 months, though it does lose flavor the longer it's in the freezer.
