Description

Skillet Peach Cobbler is a fresh and easy summer dessert. It’s made healthier with less sugar and a whole wheat Greek yogurt biscuit topping.


Ingredients

  • 6 large yellow peaches, peeled and sliced
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 2 teaspoons corn starch
  • 1/4 cup all purpose flour
  • 1/4 cup whole wheat flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon baking powder
  • pinch of sea salt
  • 1 tablespoon cold unsalted butter, grated
  • 1/2 cup plain greek yogurt
  • 1 tablespoon milk


Instructions

  1. Preheat the oven to 375°F. Lightly grease a 10-inch oven-safe skillet with butter or cooking oil. Set aside.
  2. In a large mixing bowl, mix together peach slices, honey, lemon juice, and cornstarch.
  3. In a medium mixing bowl, whisk together the flours, sugar, baking powder and salt. Using a fork, mix in the grated butter until pea sized lumps form. Stir in the greek yogurt until just combined.
  4. Pour the peach mixture into the skillet. Drop spoonfuls of batter over the peaches. Brush the tops of the batter with milk. Bake for 25-30 minutes, or until the filling is bubbly and the topping is golden.
  5. Let cool for at least 15 minutes before serving.


Notes

Keep an eye on the biscuit topping. If they’re browning too much, cover the top with foil.

When serving, top it with a dollop of Greek yogurt, a scoop of vanilla ice cream, or some whipped cream.
