Description
This Cucumber Mango Salad with Avocado is a bright and refreshing salad. It's crunchy, tangy, and sweet with creamy avocado! Great for a snack, brunch, dinner, or even a bbq side dish.

For the Dressing
- 2 tablespoons extra virgin olive oil
- 2 tablespoons fresh lime juice
- 1 teaspoon honey
- sea salt, to taste
For the Salad
- 1 english cucumber, diced
- 1 ripe mango, peeled, cored, and diced
- 1 small ripe avocado, peeled, pitted, and diced
- 1/4 cup fresh cilantro, roughly chopped
- crushed red pepper (optional)
Instructions
- Make the dressing. In a small bowl, whisk together the olive oil, lime juice, and honey until combined. Season with sea salt, to taste. Set aside.
- In a large bowl, toss the cucumber, avocado, mango, and cilantro. Drizzle with the dressing and add a pinch of crushed red pepper (if using). Toss one more time until combined.
- Serve immediately, or refrigerate in an air tight container for up to 2 days. Enjoy!
