Description

This Chocolate Chip Pumpkin Bread is super easy to make! It's made healthier with some whole wheat flour, and oil instead of butter. This moist pumpkin bread is a great dessert, snack, or even breakfast. Make this and enjoy for a perfect way to kick-off Fall!


Ingredients

  • 3/4 cup whole wheat flour
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon fine sea salt (see notes)
  • 3/4 cup brown sugar
  • 2 large eggs
  • 2 tablespoons refined coconut oil, melted (or vegetable oil)
  • 1 1/2 cups pumpkin puree
  • 2 teaspoons pure vanilla extract
  • 1/2 cup mini chocolate chips (or regular chocolate chips)

Instructions

  1. Preheat oven to 350°F. Grease an 8 x 4 inch loaf pan. Set aside.
  2. In a medium bowl, whisk together the flours, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt. Set aside.
  3. In a large bowl, whisk together the brown sugar, eggs, and oil until smooth. Whisk in the pumpkin puree and vanilla extract until combined.
  4. Add the dry ingredients to the wet ingredients. Stir until just combined. Do not over mix.
  5. Gently fold in the chocolate chips, reserving about 1 tablespoon of chocolate chips for the next step.
  6. Pour the batter into the prepared pan and smooth the top with a spatula. Sprinkle the remaining chocolate chips on top. Bake for 65-75 minutes or until a toothpick inserted in the middle comes out mostly clean with only a few crumbs.
  7. Cool for 10 minutes in the loaf pan before removing and placing on a wire rack to cool completely.


Notes

Fine sea salt is used in this recipe. If you use iodized salt (table salt) just use a little less.

Store wrapped in plastic or in an airtight container for up to 3 days on the counter, or up to 5 days in the refrigerator. You can also freeze by wrapping the individual slices in plastic wrap or a freezer bag for up to 3 months.
