Vegetable Soup with Orzo and White Beans

This Vegetable Soup with Orzo and White Beans is an easy healthy meal. Made in just 30 minutes, it's filled with seasonal vegetables and kale.

Ingredients -olive oil -onion -carrots -celery -garlic -broth -diced tomatoes -bay leaves, parsley, and thyme -orzo -kale -navy beans -salt and pepper

Heat olive oil in a large pot. Add onion, carrots, and celery. Cook, stirring occasionally, until softened. Add garlic, and cook until fragrant.

Stir in the broth, diced tomatoes, bay leaves, parsley, and thyme. Season with salt and pepper. Bring to a simmer.

Add in the orzo. Simmer for 8-10 minutes, stirring occasionally, until the orzo is al dente.

Remove the bay leaves and discard. Stir in the kale and navy beans. Simmer until kale is softened.

Season with more salt and pepper to taste. Serve warm, topped with freshly grated parmesan cheese, if desired. Enjoy!
