Ingredients – spaghetti squash – olive oil – cherry tomatoes – garlic – shredded mozzarella – fresh basil – salt and pepper

Step 1 Preheat the oven to 400°F. Line a baking sheet with parchment paper.

Step 2 Cut squash in half lengthwise and scrape out the seeds. Drizzle with olive oil and season with salt and pepper.

Step 3 Place halves facedown on the baking sheet and bake for 45-50 minutes. Flip halves over and let cool for a few minutes.

Step 4 Heat 1 teaspoon of olive oil in a small skillet over medium heat. Add garlic and cook for about 30 seconds. Add tomatoes and season with salt and pepper. Cook for 2-3 more minutes, until softened.

Step 5 Use a fork to scrape the insides of the spaghetti squash to make strands.
