For the Dressing – extra virgin olive oil – red wine vinegar – lemon juice – honey – garlic –Italian seasoning – salt and pepper

For the Salad – uncooked orzo – cherry tomatoes – orange bell pepper – yellow bell pepper – cucumber – red onion – feta cheese – fresh basil – salt and pepper

1. Bring a large pot of salted water to a boil. Cook orzo until al dente, according to package directions.

2. While the pasta is cooking, make the dressing by whisking all the dressing ingredients together in a small bowl until combined.

3. Drain and rinse the orzo with cold water until cooled. Place in a large bowl.

4. Add in the tomatoes, peppers, cucumber, red onion, feta, and basil. Toss to combine. Drizzle with the dressing and toss again to combine. Season with salt and pepper, to taste.

5. Serve immediately or store in an air tight container in the refrigerator. Enjoy !
