Ingredients • extra virgin olive oil • shallot • garlic • honeynut squash • apple • vegetable broth • fine sea salt • sage, cinnamon, nutmeg

Step 1 Heat the olive oil in a large pot over medium-low heat. Add the shallot and garlic, cooking until the shallot is translucent, about 2 minutes.

Step 2 Add the honeynut squash, apple, vegetable broth and salt. Bring to a simmer. Simmer for 15-20 minutes, or until the squash is tender.

Step 3 Using an immersion blender or regular blender, blend until smooth. Season with sage, cinnamon, and nutmeg.
