Confetti Pancakes

These are super fluffy pancakes that are so fun, you'll have to make a stack ASAP!

Ingredients – all-purpose flour – granulated sugar – baking powder – fine sea salt – milk – egg – vegetable oil – vanilla extract – rainbow sprinkle

In a medium bowl, whisk together the flour, sugar, baking powder, and salt. Set aside.

In another bowl, whisk  the egg and milk about 1 minute until combined and foamy. Gently whisk in the oil and vanilla extract until combined.

Add the dry ingredient mixture into the wet ingredient mixture and whisk together until just combined. Gently fold in the rainbow sprinkles.

Heat a griddle to 375° or a skillet over medium-low heat. Lightly grease with oil or butter.

Pour ¼ cup of batter for each pancake. Flip pancakes after about 2 minutes when bubbles begin to form and edges start to set. Cook another minute on the other side or until golden. Repeat with remaining batter.

Serve with maple syrup or whipped cream and enjoy!
