Broccoli Cheddar Orzo

Broccoli Cheddar Orzo is a one-pot dish ready in less than 20 minutes. It's easy to make and is perfect for a meatless Monday dinner.

Ingredients • unsalted butter • orzo • chicken or vegetable broth • milk • broccoli florets • sharp cheddar • parmesan • sea salt

Step 1 Melt the butter in a skillet over medium heat. Add the orzo, and cook for 2-3 minutes, stirring often.

Step 1 (cont) Stir in the broth and milk. Bring to a simmer, and lower the heat to medium-low. Simmer for 6 minutes, stirring occasionally.

Step 2 Add the broccoli, and cook for 3-4 more minutes until the orzo is cooked and the broccoli is tender. Add a splash more broth, if needed. Remove from heat.

Step 3 Stir in the cheddar and parmesan until combined. Season with sea salt and pepper.

Step 4 Serve immediately and enjoy!
