Black Eyed Pea Salad

Ingredients • black eyed peas • orange bell pepper • cherry tomatoes • red onion • cilantro • garlic • olive oil • apple cider vinegar • sea salt

Step 1 In a medium bowl, toss together the black eyed peas, bell pepper, cherry tomatoes, red onion, cilantro and garlic.

Step 2 In a small bowl, whisk together the olive oil and cider vinegar. Pour over the black eyed peas mixture and stir until combined.
