    • 2 tablespoons red onion, diced
    • 2 tablespoons fresh cilantro, chopped
    • ½ jalapeño, seeds and membranes removed, minced
    • juice of ½ lime
    • sea salt, to taste

    For the Pork Chops

    • 4 thin bone-in pork chops, about 1 pound
    • 2 tablespoons all-purpose flour
    • ½ teaspoon garlic powder
    • ¼ teaspoon paprika
    • pinch of cayenne (optional)
    • salt and pepper, to taste
    • 1 tablespoon olive oil
